Cabot Monterey Jack cheese with a "sell by" date of 04/10/10 is still good today (it hadn't been opened)

It tastes a lot more like cheddar than Monterey Jack.

I wonder what the extra sharp Cheddar will taste like (sell by 08/20/10)
